TriMark United East Boston Globe Follows TriMark United East ProjectNot long ago, cameras followed a New York city's restaurant opening in the much talked about reality show, "The Restaurant." When the Boston Globe sought to create an article and photo-essay about the process of opening a resturant in the Boston metropolitan area, it became apparent that the restaurant they picked would be outfitted by TriMark United East. With more than a year of advance work, Seth Woods, jeffrey Gates, and Matt Burns, better known as The Aquitaine Group, owners and operators of several other successful restaurants in Boston Proper, planned the opening of the Union Bar and Grille, a modern and classy restaurant in the newly renovaterd Washington Street corridor in Boston's South End. The menu would range from pan-roasted beef tenderloin to swordfish steaks, with lots of choices in between. The demolition and construction process started during the summer of 2003. In an dramatically photographed series of shots, Globe Photographer Pat Greenhouse filmed Roland Bourget, TriMark United East's senior installer going over kitchen plans with owner Jeffrey Gates, helping the Aquitaine Group, in its latest project, with all the elements from design and equipment to glassware and back-of-house supplies. Every few days the photographer returned to watch the progress from an empty space to a fully-operational restaurant which was chronicled in the article. The photos track the progress of the restaurant from demolition to empty space, documenting equipment deliveries and installations, culminating in the realization of a fresh, new Boston dining destination. A little more than a month from the day of the first shoot, the Union Bar and Grille was open for business, gathering rave reviews. According to The Boston Herald, Union Bar and Grille will "raise the culinary 'steaks'" in Boston's South End. Even better, there were plenty of customers in the dining-room -- even during the Red Sox run for the World Series -- a lead off homerun for another TriMark client.
