Islands Restaurants — Open for Business

Starting in 1990 with the Islands Restaurant in Brea, California, TriMark RobertClark has managed Islands foodservice equipment and kitchen installation as well as front of the house fixtures, including booths, cabinetry, host stands. "They helped Islands open 6 restaurants in 2003. Typically it takes us about 5 to 6 months from start to finish to open a new restaurant, TriMark RobertClark comes in the last 3 weeks to install all the kitchen equipment and put together the dining room. Of course they put in a lot of time ahead of the installation during the design and coordination phase to make sure the actual install goes off without a hitch," said Lewis Jackson, Vice President of Real Estate and Development at Islands Restaurants.

Remodeling is more complicated as older buildings have a host of unique problems. According to Jackson, "We really don't want to inconvenience our customers or our staff. You have to work at night, and TriMark RobertClark takes great pains to minimize the impact of their work on our operations. They've done some very complex remodels for us over the last few years. We just completed a remodel of our original Pasadena location. The on-site work was concentrated in a two-day period."

"Bob Heimstra and his crew provide a lot of assistance designing the workflow to minimize the disruption to our business. They're always under a great deal of pressure to get the restaurant up and running after the other trades have completed their work. And at that point the schedules are always tight. So we're always putting them under the gun."
